This dinner couldn’t be easier. Ideal as a quick alternative to a roast dinner. I serve with courgettes drizzled with olive oil and garlic and green beans. Works well with potatoes, rice or whatever veg you have to hand. It’s delicious but still healthy and easy on the waistline.
I love it with an ice cold glass of sauvignon blanc.
4 chicken breasts
4 slices prosciutto
2 tablespoons butter
3 cloves garlic – minced
Small bunch of chives – snipped up small
Pre heat oven to 200C / 180C fan
Mash your minced garlic into your butter.
Slit your chicken breasts in the centre and divide the garlic butter between your four chicken breasts. Rub a little all over the chicken.
Wrap each chicken breast in the slice of prosciutto.
Drizzle with olive oil and sprinkle over your chopped chives.
Bake in the centre of the oven for approximately 25 minutes.
